Roasted Salmon

Ingredients

  • 4 salmon fillets (skin-on or skinless)
  • 3 tablespoons extra virgin olive oil
  • 2 garlic cloves, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano or thyme (or a mix)
  • Salt and black pepper to taste
  • Fresh lemon wedges, for serving
  • Fresh parsley or dill, for garnish

Instructions

1. Preheat the Oven:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease with olive oil.

2. Prepare the Salmon:
Place the salmon fillets on the prepared baking sheet. Drizzle the fillets with 2 tablespoons of olive oil, then season with minced garlic, lemon juice, oregano (or thyme), salt, and black pepper.

3. Roast the Salmon:
Roast the salmon in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork and is cooked through (cooking time may vary depending on thickness of the fillets).

4. Finish and Serve:
Remove the salmon from the oven. Drizzle the remaining tablespoon of olive oil over the fillets for added richness and shine. Garnish with fresh parsley or dill and serve with lemon wedges on the side.

Optional Add-Ons:

  • Serve with roasted vegetables or a side salad.
  • For extra flavor, sprinkle a bit of smoked paprika or chili flakes before roasting.
