Lemon Pie

Ingredients

For the Crust:

  • 1 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • ¼ teaspoon salt
  • ½ cup extra virgin olive oil
  • 2-3 tablespoons cold water

For the Filling:

  • 4 large eggs
  • 1 cup granulated sugar
  • ½ cup fresh lemon juice (about 3-4 lemons)
  • 1 tablespoon lemon zest
  • ¼ cup extra virgin olive oil
  • 2 tablespoons all-purpose flour
  • Powdered sugar, for garnish

Instructions

1. Prepare the Crust:

  1. In a medium bowl, whisk together the flour, sugar, and salt.
  2. Add the olive oil and mix until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, until the dough comes together.
  3. Press the dough evenly into a 9-inch pie pan, ensuring the edges are well-formed. Prick the bottom with a fork.
  4. Preheat the oven to 350°F (175°C). Bake the crust for 12-15 minutes or until lightly golden. Let it cool.

2. Make the Filling:

  1. In a mixing bowl, whisk together the eggs and sugar until smooth and well combined.
  2. Add the lemon juice, lemon zest, and olive oil, and whisk again.
  3. Sift in the flour and mix until the filling is smooth.

3. Assemble and Bake:

  1. Pour the lemon filling into the pre-baked crust.
  2. Bake at 350°F (175°C) for 20-25 minutes, or until the filling is set and slightly golden around the edges.

4. Cool and Serve:

  1. Let the pie cool completely before slicing.
  2. Dust with powdered sugar before serving for an elegant touch.

  • Fresh mint leaves or thin lemon slices for decoration.
