- 2 tablespoons extra virgin olive oil
- Fresh parsley or basil leaves, for garnish

Instructions
1. Prepare the Sauce:
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the onion, garlic, carrot, and celery. Sauté until softened (about 5-7 minutes).
- Add the ground beef or turkey and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the tomato paste, crushed tomatoes, oregano, basil, and stock. Season with salt and black pepper.
- Reduce the heat to low and let the sauce simmer uncovered for 20-30 minutes, stirring occasionally, until thickened.
2. Cook the Spaghetti:
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
- Drain the spaghetti and toss with 2 tablespoons of olive oil to prevent sticking and add flavor.
3. Assemble and Serve:

- Garnish with fresh parsley or basil and sprinkle with Parmesan cheese if desired.
Optional Add-Ons:
- A drizzle of extra olive oil on top for enhanced richness.
