Chicken Salad
Ingredients
For the Salad:
- 2 cups cooked chicken breast, shredded or cubed
- 4 cups mixed salad greens (arugula, spinach, or romaine)
- 1 cup cherry tomatoes, halved
- ½ cucumber, sliced
- ½ red onion, thinly sliced
- ½ cup Kalamata olives
- ¼ cup crumbled feta cheese (optional)
For the Dressing:
- 3 tablespoons extra virgin olive oil
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon dried oregano
- Salt and black pepper to taste
Instructions
1. Prepare the Dressing:
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, oregano, salt, and black pepper until well combined.
2. Assemble the Salad:
- In a large salad bowl, combine the salad greens, cooked chicken, cherry tomatoes, cucumber, red onion, and olives.
- If desired, sprinkle crumbled feta cheese on top.
3. Toss and Serve:
- Drizzle the olive oil dressing over the salad and toss gently to combine.
- Serve immediately with warm pita bread or on its own.

- Roasted red peppers for extra flavor.
