Chicken Salad

Ingredients

For the Salad:

  • 2 cups cooked chicken breast, shredded or cubed
  • 4 cups mixed salad greens (arugula, spinach, or romaine)
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, sliced
  • ½ red onion, thinly sliced
  • ½ cup Kalamata olives
  • ¼ cup crumbled feta cheese (optional)

For the Dressing:

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

1. Prepare the Dressing:

  1. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, oregano, salt, and black pepper until well combined.

2. Assemble the Salad:

  1. In a large salad bowl, combine the salad greens, cooked chicken, cherry tomatoes, cucumber, red onion, and olives.
  2. If desired, sprinkle crumbled feta cheese on top.

3. Toss and Serve:

  1. Drizzle the olive oil dressing over the salad and toss gently to combine.
  2. Serve immediately with warm pita bread or on its own.

Optional Add-Ons:

  • Avocado slices for creaminess.
  • Roasted red peppers for extra flavor.
