Lemon Pie
Ingredients
For the Crust:
- 1 ½ cups all-purpose flour
- ¼ cup granulated sugar
- ¼ teaspoon salt
- ½ cup extra virgin olive oil
- 2-3 tablespoons cold water
For the Filling:
- 4 large eggs
- 1 cup granulated sugar
- ½ cup fresh lemon juice (about 3-4 lemons)
- 1 tablespoon lemon zest
- ¼ cup extra virgin olive oil
- 2 tablespoons all-purpose flour
- Powdered sugar, for garnish
Instructions
1. Prepare the Crust:
- In a medium bowl, whisk together the flour, sugar, and salt.
- Add the olive oil and mix until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, until the dough comes together.
- Press the dough evenly into a 9-inch pie pan, ensuring the edges are well-formed. Prick the bottom with a fork.
- Preheat the oven to 350°F (175°C). Bake the crust for 12-15 minutes or until lightly golden. Let it cool.
2. Make the Filling:
- In a mixing bowl, whisk together the eggs and sugar until smooth and well combined.
- Add the lemon juice, lemon zest, and olive oil, and whisk again.
- Sift in the flour and mix until the filling is smooth.
3. Assemble and Bake:
- Pour the lemon filling into the pre-baked crust.
- Bake at 350°F (175°C) for 20-25 minutes, or until the filling is set and slightly golden around the edges.
4. Cool and Serve:
- Let the pie cool completely before slicing.
- Dust with powdered sugar before serving for an elegant touch.

- Fresh mint leaves or thin lemon slices for decoration.
