Ingredients
- 2 cups mixed salad greens (spinach, arugula, or romaine)
- ½ cup assorted nuts (almonds, walnuts, or pecans), lightly toasted
- ½ cup dried fruits (raisins, cranberries, or apricots), chopped if large
- 1 fresh apple or pear, thinly sliced
- ¼ cup crumbled feta or goat cheese (optional)
For the Dressing:
- 3 tablespoons extra virgin olive oil
- 1 tablespoon honey
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions
- Prepare the Dressing:
In a small bowl, whisk together the olive oil, honey, lemon juice, Dijon mustard, salt, and pepper until well combined. - Assemble the Salad:
In a large salad bowl, combine the mixed greens, toasted nuts, dried fruits, and sliced apple or pear. If desired, add crumbled cheese for extra flavor. - Toss and Serve:
Drizzle the olive oil dressing over the salad and toss gently to combine. Serve immediately.
