Ingredients

  • 2 cups mixed salad greens (spinach, arugula, or romaine)
  • ½ cup assorted nuts (almonds, walnuts, or pecans), lightly toasted
  • ½ cup dried fruits (raisins, cranberries, or apricots), chopped if large
  • 1 fresh apple or pear, thinly sliced
  • ¼ cup crumbled feta or goat cheese (optional)

For the Dressing:

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Prepare the Dressing:
    In a small bowl, whisk together the olive oil, honey, lemon juice, Dijon mustard, salt, and pepper until well combined.
  2. Assemble the Salad:
    In a large salad bowl, combine the mixed greens, toasted nuts, dried fruits, and sliced apple or pear. If desired, add crumbled cheese for extra flavor.
  3. Toss and Serve:
    Drizzle the olive oil dressing over the salad and toss gently to combine. Serve immediately.

Optional Add-Ons:

  • A sprinkle of chia or sesame seeds for added texture.
  • Substitute fresh berries like strawberries or blueberries for a seasonal twist.
