Spaghetti Bolognese

Ingredients

For the Sauce:

  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 500g (1 lb) ground beef or ground turkey
  • 1 can (400g) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ cup beef or vegetable stock
  • Salt and black pepper to taste

For the Pasta:

  • 400g (14 oz) spaghetti
  • 2 tablespoons extra virgin olive oil
  • Fresh parsley or basil leaves, for garnish
  • Parmesan cheese, grated (optional)

Instructions

1. Prepare the Sauce:

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the onion, garlic, carrot, and celery. Sauté until softened (about 5-7 minutes).
  2. Add the ground beef or turkey and cook until browned, breaking it up with a spoon as it cooks.
  3. Stir in the tomato paste, crushed tomatoes, oregano, basil, and stock. Season with salt and black pepper.
  4. Reduce the heat to low and let the sauce simmer uncovered for 20-30 minutes, stirring occasionally, until thickened.

2. Cook the Spaghetti:

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. Drain the spaghetti and toss with 2 tablespoons of olive oil to prevent sticking and add flavor.

3. Assemble and Serve:

  1. Divide the spaghetti into serving bowls or plates. Top with the Bolognese sauce.
  2. Garnish with fresh parsley or basil and sprinkle with Parmesan cheese if desired.

Optional Add-Ons:

  • A drizzle of extra olive oil on top for enhanced richness.
  • A pinch of red chili flakes for a spicy kick.
